One way is to drill a whole bunch of tiny holes and place a large tupperware container underneath your enclosure to catch all the access water from misting.

If you plan to be gone days at a time, do you plan on having someone coming over to mist your chameleon 3 times a day? It's not fair to the chameleon if you think you can just take off for a few days at a time and he'll be fine until you get home.
I'd also suggest no substrate, so you can monitor your chameleons intake of crickets. Even if you cup feed, I still recommend no substrate. It makes life a whole lot easier on the chameleon keeper.
I use these Exo-Terra units to house my crickets. It keeps them contained well and gives plenty of room for them. I advise an open screened enclosure for the little guy :)
