Since this seems to be an ongoing issue, you just need to learn from your mistakes and triple-check that he isn't anywhere near the door when you open/close it. It is entirely in your power to prevent this from happening.

Always better to be over-worried than under-worried imo! As long as any remaining shed isn't wrapped around a limb or area of the body where it risks cutting off blood flow, there is nothing to be worried about :)

Unless the substrate is bioactive (which it does not look like it is), it should be removed entirely. It will harbor dangerous bacteria and make your chameleon sick. Bare bottom is much safer, or else put some time into researching how to convert it to bioactive
Absolutely do not feed or bathe your chameleon in pedialyte unless you have been given explicit instruction by a qualified exotics veterinarian. Your chameleon is very sick and this is no time to be experimenting with random "treatments" to help. You will only do him harm by stressing him out...
Sounds to me like you just don't have much of an understanding of genetics. You pick chameleons from a certain sire for a higher possibility that your chameleon will turn out somewhat similar to the sire. It is in no way guaranteed and you were absoutely not scammed. That is just plain offensive...
There is no one particular wattage that you should use. It is completely dependent on your individual environment and it is up to you to make the right choice by using a reliable thermometer to ensure the bulb you use gives you the basking temp you need
