I only covered the protein section of the concern with dubia and the the uric acid storage. I do have a few papers that I stumbled upon a couple years ago but I don't know how to attach them here. I have found that the lower protein percent they are fed the better. I feed mine on a 15% plant...
While roaches are great to add to the diet you don't want to feed them in over abundance. They are high in protein and are believed to be a contributing factor in the development of gout.
This appears to be a burn but a vet check for fungal infection wouldn't hurt either. Until you can get an appointment I would use SS cream without any numbing agents in it. This is the silver sulfidizine (sp) burn cream
Do you have any pictures of it? While I've never personally dealt with this I can get input from some incredible keepers of Jackson's. But I am curious as to your supplementation schedule and lighting? Horns don't generally break off unless there is an injury or nutritional problem.
This is definitely a female. A couple of my girls held on too their tiny buds like that but by this age if it was a male you would have definite horns by now.
If your having problems with shed then your humidity is more than likely too high. Try to get it down to about 40% during the day and as close to 100% as you can get it at night.
There are many things that I can see need attention. Your uvb need to be upgraded to a t5 linear. 10.0 in reptisun or 12% in arcadia. You will also need to add more vines and branches. I'm also concerned about mbd. The swelling in the joints and legs is a major indicator.
