Have you considered "hand feeding" from tongs? That may be easier for you if handling bugs creep you out.
I think that reverse tongs, the kind that stay closed till you pinch then, are easier to use than the normal, pinch to open variety.

Looks great! I don't think a baby or even a juvie veiled would have anything but a fun time navigating that jungle. I'm not sure the plants will get enough light though, so they may thin out on their own.

I purchased a female amiblobe panther chameleon this morning at a local reptile show. The seller said she's roughly 6 months old and hasn't been bred yet. She's super cute, and seems healthy, though its been mentioned in another thread...
