Chameleons do not seem to really have layers of fat between the skin and their ribs. They are naturally lean animals and like some other reptiles, many species of chameleons have specific locations of the body that serve as fat/nutrient reserves.
For veiled chameleons the area in the triangle of their casque, serves that purpose. Chameleons that are not adults should remain lean here as well. If you have a chamleeon that is still quite young, you have less to worry as their bodies are growing and using all the available nutrients, they will put on very little bulk.
A group of detailed photos of your chameleons would help determin if there needs to be a change in diet. However for a young growing chamleeon, two things insure good growth asside from proper husbandry. 1) Variety in food, and/or; 2) Maximising the foods nutrient output by having healthy clean feeders, given a last minute gutload.
