I was very upset about something that had happened... I tried to feed my chameleon he ate but stopped after a couple... It seemed that he stopped the second that I started thinking about what was upsetting me

I do not think they have the ability to sense emotion or even understand it outside of fight or flight response. Their brains are rather primitive as far as that goes. But it could have been a change in your demeanor that your cham noticed and perhaps felt threatened. He may have been deciding if he should stay or run.
