Is it normal for my veiled chameleon to eat a plant like this i feed him everyday

Yes it is completely normal for a veiled to eat plants. Make sure your plants in the cage are veiled tested. I’ve stretched a sheet for you.

It's a golden pothos but I've heard some people say that's it's toxic if consumed in large quantities and I've heard other people say it's safe for them

It is toxic for cats and dogs I believe but it’s safe for chameleons.
 
It’s completely normal for them to eat plants, however not every Veiled’s does it. Yes, the Pothos is considered toxic, however no reports are known for incidents with chameleons, therefore it’s considered safe.
