How long should I wait for it to dry

What exactly do you mean by "poly". Is this a liquid applied polyurethane or polyethylene plastic sheeting, polystyrene foam?

48 hours sounds about right if its in a relatively well ventilated area, temps are not too cold (>65 degrees) and relative humidity is not too high (about <80% rh).

Just out of curiousity - was it a two part coating - came in two tubes that you mixed together before applying?

I usually wait at least 5 days so there is not a strong odor. The surface may be dry but polyeurathane takes more than 48 hours to stop smelling. If it smells strong it may be putting out harmful vapor for your cham to breath. JMO
