She'll stop eating when full.

You can't stop mother nature in the worm growth dept., but you can slow her down, by keeping the silkworms a little cooler than room temp, and can even place hornworms in the fridge for a day at a time, to slow growth, if dial on your fridge is not kept too cold. Supers and butters should be okay, size wise, and not grow bigger than your chameleon can handle.

As far as crickets, my 4 month old panther ate 15-20 crickets today but that was all I was feeding at the time. If you are offering other foods, than obviously you would feed less crickets. I did not start feeding the supers until about 6 months old or so. Silkworms are great . Buy the smallest ones and they will take a while to get real big.
