@broderp , since your initial post did state drinking opportunity for your chameleon aside, I would think using a humidifier alone to sustain "most" plant life would create an environment that would not allow the best conditions for the chameleon. Basically if you think of the idea of misting the enclosure and then allowing it to "dry out" a bit and let the humidity level drop before misting again to avoid mold and excess bacterial growth, by using a humidifier to keep the plants healthy enough I believe you would create more issues that would be difficult to monitor (not impossible, but not easy). Besides drinking, often chameleons will clean out their eyes with the droplets and this would not be an easy option without misting. I guess you could use a hand mister for some of the issues, but not the most convenient solution for me.
