Mixed Breeding

They are both Chameleons but one is Chamaeleo and the other one is Furcifer
they are different Genus's
 
So what would happen if they tried to mate? Would you have retarded imbred baby chameleons running around?

It's not actually possible for anything to come of that. Additionally, it is highly unlikely they would even recognize each other as possible sexual partners.
It's not like dogs. They are different genus (already mentioned) and different species.
Juli's analogy is a great one. Parakeets and canarys are both birds but they cannot produce offspring together.
How about this ... You and a Chimpanzee. Probably not going to be tested ... but I doubt very much that there would be a pregnancy.

Panthers and veileds are too far evolutionarily removed from each other for it to be biologically, and probably behaviorly, possible. Some other, more evolutionarily close chameleons have been shown to be able to hybridize such as Chamaeleo calyptratus x Chamaeleo arabicus. Subspecies should be able to hybridize as well (Chamaeleo jacksonii jacksonii x Ch. j. xantholophus will).
