I can really only offer up one, but normal lucky bamboo looks great, is cheap and easy to maintain as well as being non toxic. I've heard mixed things about "real" bamboo, and I'm talking about Dracaena braunii. Make sure that any plant you buy from the store is not treated with any nasty pesticides before you place them in the enclosure!
What I did with my Dracaena braunii to make it natural looking but also easy to take care of is I bought a square, glass container and filled it with aquarium gravel to stabilize the plant. Then I wrapped a jungle themed aquarium background around the glass before hiding it best as I could with other sticks and such. Dracaena braunii basically just require water, and as it grows too tall you can cut the stalks and grow whole new plants. You'll be amazed how quickly your supply will double, and these guys sell for like 3-5 bucks even at Safeway.
