Like Candyman said, a cup is the best way to monitor you little guy's food intake. I hang one inside the enclosure each morning before I leave for work. When I get home, I just count how many feeders (if any) are left. Nice and easy! And congrats!
Like Lathis said, it's defensive. She's trying to make herself look bigger and more threatening. Lateral compression (squeezing in her sides and flattening like a pancake), is another common behavior. She'll settle in, though.
Do you have live plants in the enclosure? If so, what sort of soil are you using/where did it come from? For instance, did you re-pot the plants. Just wondering if that might have something to do with it. If the plants came from a nursery, they might very well have come along with a hitchhiker.
Here's the enclosure with more branches. I've got a few more to add, but I need to get some more neodymium magnets (I use them to mount the branches and to hang the feeding bin and worm cup). Thanks again for your help!
Yeah, my girl's still settling in as well. It's been about two weeks and she's still pretty wary of me. The big news is, she ate out of my hand last night! I'm making the switch from crickets to dubias, as well.

Have you tried a feeding cup? I put feeders into a tall tupperware container and hang it midway up the vivarium. My girl can see the movement inside and go over if she's interested. She can reach in, but the feeders can't climb out.
