As for your question about how a digital thermometer works if it's anything like a temp sensor in a car they simple run an electrical current through a metal that changes it's resistance with temp. The device converts the resistance into a temp reading.

I think the basic is the one I got. If so it only comes with one nozzle but can easily support more you just dasiy chain them together. I think the pump can support like 8 nozzles.
Waterfalls or fountains are not advised because they build up bacteria really fast and chameleons like to poop in the water, misting or dripping is the way to go. I would add some vines between the plants. Other then that it looks great
I only use mine on one cage it works great. Been using it for about a year now no problems. And they definitely can be expanded easily you just daisy chain your nozzles together
