Well, some animals may never be comfortable with it. Try when you know he should be hungry and move very slowly as you approach. It might help to hold a cricket's back legs and let it grasp a branch or leaf so that he doesn't totally feel like he's taking it off you. If the insect remains very still, you can pinch them a little to make them move which should attract the chameleon's eyes as well.
Mine did it the first time I tried, but she is very well tempered. All I do is hold the cricket by the back of it, and just put my hand in her cage very slowly. Then I put it by her, and she gets it.
What helps is to let the cricket 'walk' on a leaf or branch while you hold it by its hind legs. That will usually get the chameleon's attention. Once he's accepting food that way you can try just holding a cricket up again.
Also don't hold the cricket too close to the chameleon at first and stand off to the side so the chameleon isn't looking at your face when looking at the chameleon, if you know what I mean.
