If you are spraying lots of warm water into a warm enclosed space then you must have a decent humidity level. As the water evaporates it goes into the air, increasing your humidity level.
Revisiting your photo, its common to cover 2-3 sides of the mesh cage with a material, usually some sort of plastic sheet (i have used a shower curtain) this would help to increase the humidity. As a temporary measure you could try putting clingfilm on 2 -3 sides and see if that makes any difference to your readings.
However, given you are already misting for 5 or 6 minutes, it sounds like this is a measurement issue. Either your humidity gauge isn't great or you are measuring at a point in your cage that for some reason doesn't see very much humidity, for example very close to the basking lamp.
