I called and spoke to them one day asking if I could get the sex I wanted. The guy was very nice and told me that I could choose the sex. I did not ask if they guarantee the sex, though, so I'm not sure about that. The man I spoke to seemed knowledgable about them, though, so I would assume that they would easily be able to tell male from female.

If you are starting with veileds, you wont have a problem with the sex. Very easy to determine!
