I’ve been running a humidifier in the room with the enclosures, combined with my MistKing to maintain the levels I want. I have a few hygrometers in the room to monitor ambient humidity, as well as the hygrometers in the enclosures themselves.

From what I can see in the photos, your chameleon is a female Veiled. I don't see any tarsal spurs in the photo. If I were to try to determine age, I'd say probably 4-6 months. Maybe someone else can tell age better than me.
Pictures would help tremendously. There's a lot to unpack in your posts. Pictures of the mentioned behavior is a good place to start, then we can address the other issues. Copying and pasting the help form would organize your thoughts and answers a little bit better.

I use corrugated plastic in my enclosures. You can find it at most Lowes or Home Depots. If not, sign and banner stores carry it and can cut it to size.
I use upside down pots that are tall enough to elevate the plants as high as I need them. There are drilled holes around the bases of them to handle drainage. I agree with the above posts suggesting Dragon Ledges. Cheap enough, easy to work with, and make your enclosure so much easier to clean...

No need to worry. Veiled are known to eat plants. My male Veiled occasionally eats portions of the pothos in his enclosure. No negative effects to date.
Hard to tell by the photo, but you can sex your Veiled by seeing if your animal has a noticeable tarsal spur (bump on the back of the hind feet). Males will have tarsal spurs and more prominent casques.
