In order to change certain colors, do chameleon have to be exposed to it first or do maybe they have to "learn" new colors?

No, each chameleon has its own set of colors I guess is the only way to say it. Certain panther locals have certain colors that are expressed, like ambanja they range from purple to blues to green and reds. No chameleon can "learn" colors.
Chameleons like deremensis, Elliot's and other montane species tend to be green but can have other colors when fired up or stressed out.
