Is it normal for a male panther cham to be sweet 99% of time then hate you 1%?

My lil dude is usually very sweet, rarely hisses or gapes, and normally, like on a daily basis, he heads my way to climb on my head or arm and stays put, I never force him or grab him to take him out of the cage. When he does this, I like to put him in our tree in the backyard for natural sun.

All of a sudden today, he's been turning his colors paler like pastel colors (he's normally bright blue and green when relaxed), and he's been hiding from me behind a branch (sideways to make himself look skinny like the branch), and hasn't come toward me at all. It's like he hates me today for no reason (that I'm aware of). He only ate 3 small silks and none of the juicy crickets or dubias. Please tell me chams are hot/cold some days and it's not health related!
 
They are hot/cold in personalities. Plus he is what like 9 months old now? He is going into maturity. They start defending their territory as they mature. Him hiding and turning his body more stick like is telling you to back off and that he does not want to be seen. They will also react to new things about you. Painted nails, new hair color, bright shirt etc. All of them have their quirks. I can wear any color shirt but I am not able to pain my nails or it triggers my guy.
 
The day that I had to shave my beard, my panther showed some stress colors around me and would not take his eyes off me.

He quickly came back around, but once my beard fills back in I'll be shaving it down to just the moustache so we'll see how he reacts to that

whew you made me feel better. So he's being a teenager basically :p I did wear a bright yellow shirt today but then changed to striped thinking that could be the culprit.

In addition to what's already been mentioned, chameleons will eat just about anything that moves like a bug. This isn't to say that they should eat any/every bug they see. Is there a possibility he ate something outside that he shouldn't have (e.g. spider, fuzzy caterpillar, firefly)? There are others, but I don't have a list handy.

IOW, could he have an upset tummy?

Thank you, only thing I've seen him eat besides his gutloaded food is a random small moth about 3 weeks ago.

Yeah I have been growing my hair for years and it always freaks my guy out when I open his enclosure up and my hair is tied up I definitely think he can recognize it / me. Never thought about my facial hair
