i have 2 tropical pitcher plants in my panther's enclosure and they like their humidity >85%. My question is, how long and frequent do you leave your misters running? so far, i have mine going 8 times a day for 2 minutes.

Well, I personally don't have one, but from what I can gather people usually set theirs at 4-5 minutes every 3-4 hours.

Agreed with @broderp. You need to keep the humidity inline with the chameleon needs rather than the plants needs.
That being said, if you have a large enough cage, 4 feet wide 2.5 feet deep and 4 feet tall you could create humidity pockets around these plants in order to keep them alive.
However if you keep the entire cage at >85% your cham will more than likely get a uri...
