That's looking great. As the plants vine out, train them up the walls and soon you'll have a natural jungle of vines and leaves your chameleon can climb around and hide in.
You might try putting a cricket feeder close to where she likes to hang out. You'll still want to cater to her because you need to know what she's eating, but put a few in the feeder to see if she goes for them.
