I'm about to get my first veiled chameleon and a big concern I have is what to do if I go out of town?

Have everything automated and a trusted friend who can follow directions. Write out EVERYTHING - things that seem obvious to cham owners aren't necessarily clear to non-cham owners. Have the friend come over for practice runs where they can see how everything works, what to look for if it's not, and what to do in various situations (like when my super-friendly panther comes out of his cage while being fed as an example). And listen to the podcast, because it's awesome (and while you're at it, listen to the rest of them too!).
