I happen to have 2 bags of this stuff sitting around http://www.drharveys.com/products/show/13-veg-to-bowl if I grind it down would it be a good gutload for my crickets and dubias

It would be good
I breed my own crickets and I gut load them crushed dog food and oats and sprinkle calcium on the food and that guy loads them the cheap way. But the stuff you got would work well.

Dog food has way too much protein for a chameleon. The levels of protein in either of those dog foods are designed for a large mammal, who has a different metabolic rate compared to that of a reptile.
Feeding your chams feeders gut loaded with those foods will shorten it's life.

Dog food is not a good gutload
you can use it in small portions as just part of what you feed the crickets you are just keeping alive (or keeping to breed) and arent soon going to feed off to the chameleon. But dont give it to the ones that are going to be fed off to the chameleon within a few days
