You need to get a thermometer ASAP.. You NEED to know what the ambient and most importantly the basking temperature is... Digital is best by far, the dial ones are notoriously inaccurate. Temperatures are VERY important
There is no adams apple on a chameleon lol.. doubtful that its a blockage either. Are you seeing him drinking? Dehydration can actually cause swelling in the tongue.. If he's not hydrated enough he could have problems swallowing
If it's the exo-terra combo probe it does have a large tip.. If you could take the top of the enclosure off and notch the aluminum just a bit (big enough for just the wire) you could hold the wire in the notch and reinstall the top

I would try seeing if you could get the pot it's planted in to drain better.. I usually have a pot with lots of holes on the bottom (sometimes add more). Put a layer or rocks on the bottom, top with a mixture of sand and organic soil, then rocks on top.. Seems to drain very well
Veiled Chameleons are going to be larger than a panther for sure, I'm sure there are some panthers that are larger than some veileds, but typically it's the Veiled that is larger.
