I'm not sure if my cham has respiratory infection, I was told and from what researches have said that if your cham breathes with their mouth opened while making a crackling/wheezing noise then it is a respiratory infection. Here are some info on my cham Kiddo.

Is it normal for my 3 months old male Veiled to be eating his own shed? Also, is this good or bad for him?

I believe it's normal especially after moving him into a new environment, just give him a few days to get use to his new home and I'm sure he'll be fine :)
As for me and recommended by many others on this forum, I wouldn't put any kind of waterfall for a chameleon. Your enclosure may look nice with a waterfall as it mimics a natural water source for your chameleon, but it will also increase the percentage of unhealthy conditions for your chameleon...
Is this post referring to my current setup on my misting and water dripper? If so, yes I do have a proper drainage set up that can hold water up to a week or possibly more, but I have never waited more than a week to empty the drainage water :)
