I don't know about your beardie but I would guess its ok.
If you hold one superworm between your fingers it will start to wiggle like crazy. My cham loves their movements and and won't wait a second to eat it
Your cham is smart! Mealworms can cause impaction and shouldnt be used as a feeder for chameleons. Try superworms instead or dubia roaches which works as well as crickets as base feeder

Try hand feed before you have given her food so she's extra hungry and don't get too close. There's no guarantee she will eat it the first time, even the fifth time but just keep trying and don't put any pressure on her and she will eventually take the bait ;)
Two weeks are nothing at all. It takes time for a chameleon to build up their trust. At two weeks my chameleon would either hide from me or puff up. Patience is the key. Mine only recently started to climb onto me, it took him 3 months and he is still a bit nervous about it.

Sounds like the problem should be the temp or he could be really stressed out but it would be strange if he always was like that. How warm is his basking spot?
Time will tell I would say. Veilds are quite known for their temper too but I've seen fairly friendly individuals too. How animals respond also depends on the owner, how you're behaving when you're with your chameleon etc
As a glass user myself I would recommend having the whole top in screen since chameleons need ventilation. The substrate would also need some covering as it is known to cause impact if your chameleon by chance would eat it. Accidents do happen.
Otherwise it looks pretty nice to look at...
