Paper towels are one of your best friends when it comes to something like that. I put a thin lair on the bottom of my cages. Easy cleanup when they make doodoo and all that business. Also like you said keeps great humidity. I change every 4-5 days as well.
I think the males get around the same size but I think the males can get bigger by a noticeable amount. Mine have slowed down their growing processes around 9-10 months.

Yes it's quite normal. To them shedding is like having really itchy sunburn for a week or two, or however long he takes to shed. He's just a little grumpy because he's uncomfortable. Once he's done he'll be back to his old self. Good looking guy by the way :)

What worked for me and my little one i'm raising at the moment is I cup fed but offered a mealworm every other day or two. I didn't hold it in my fingers just let it crawl on my palm. Something about that made her more comfortable. She'll eat a mealworm from my hand...

I have a few Jacksons, i'm not sure myself but I do think you're right about them not needing as much space. But to be safe My Jacksons live in 30x18x30 all screen terrariums. I prefer for them to have more space to get around rather then go higher. But that's just my taste.
