How often should a Panther Cham be pooping?

It varies - some chams go every day - others every few days - really depends on how often they eat and what's normal behaviour for them? If you see a change in these habits it may be sign of an hydration or impaction problem.......

Hard to tell too, sometimes his poop gets caught in the leaves. Haven't seen one to recently but have seen him drinking.

Yeah i know what you mean - always find a sneaky one even when you think you've found them all!! I'd keep an eye and possibly have a little look in his viv to see if you can find any fresh ones.... If you overly concerned a drop or two of cod liver oil can help move things along

As adults my chams are pooping every 5 to 7 days. An less than 4 and I would wonder if they are digesting their food enough. It really does vary though. Sounds kinda gross but take the poop in a kleenex and mash it up between your fingertips. Look to see if the poop is well digested or if there are noticeable bug parts. If the poop doesnt look very well digested, maybe shoot for a bit higher of a basking temp. Aim for the lowest temp that produces the best poop:)

My panther seems to only wanna drink off the screen. rarely do I see him drink for the leaves though they're fake atm.

Some panthers like alot of privacy.

Some chams like to be hand 'watered' - just make sure you don't choke her whilst doing it. You could try using one of those small rodent water bottles with the metal ball tip - chams are attracted to the water droplets and the metallic ball.
