I do the same kind of thing, except I cover the top of the catching container with a screen so my cham can't get in there and drink the standing water (I worry about bacteria and stuff). It works great. Just clean it out when it starts to get full.
It makes sense to cover the sides with plastic to keep humidity up, but isn't one of the reasons for a mesh enclosure to have good cross-ventilation? Wouldn't covering the sides prevent that?

Today is the fist day in about two weeks that its been above like 12C (53F).

They are so tricky too! She sat happy as a clam in the tree for about an hour with me looking in every ten minutes or so, then she was gone!
