well obviously you clean the dripper container now and then. I put it in the dishwasher once a month, and give it a wipe with paper toweling in-between times. The water wouldnt be sitting in the dripper for more than a few hours at a time anyhow.

Try adding a dripper to the cage. That way it can drink without you having to be there. Mine drink every day, usually twice a day for a couple minutes each time.
If a mantis is fairly large, with nice sharp forelegs, its possible to cause a bit of scratch damage to the chameleon. Some people therefore remove those legs. Poor mantis.
What's his weight and body length Snout to Vent? Its not uncommon for them to want to eat a lot as they grow. And he's not full grown yet, and no immediate danger of death by eating IMHO. But it wouldnt hurt to start tappering off somewhat, such that he's getting a fair bit less by the time...
Supers last a very long time. Put them in a container with some bran and oats, once or twice a week toss a slice of apple, chunck of carrot or hunk of potatoe on top of the bran (provides moisture). Your chameleon will enjoy eating the adult size supers when your chameleon is around 10 months old.

Sounds like youre on the right path to me.
The only suggestion i have is make sure the worms are small enough. He might just not be used to them. Also, My guy likes a dark coloured feeding cup, and hates to eat out of shiny or white stuff.
